It’s no secret why Colombian coffees grown in the department of Huila are highly prized – bright yet structured acidities and velvety mouthfeel combine to create a beautifully balanced cup. They remain approachable enough for the everyday drinker, but complex enough for those seeking something unique. Coffees from Huila are undoubtedly the best of Colombian coffee – the Andes mountains carve their way through the region, and the high altitude coupled with diverse microclimates ensure first-class coffee growing conditions. 95% of the coffees grown in Huila are high quality, highly traceable microlots. In the area surrounding the town of Timaná, farmers grow primarily Caturra varietal, which is generally regarded as having better cup quality though it is less resistant to disease. This offering from Finca La Laguna was processed in the traditional Colombian style, depulped onsite and fermented in small, tiled tanks that hold a single day’s harvest. The coffee is then washed up to five times before going to the patio, helping to create a very clean and stable cup.*

The aroma of the Colombia La Laguna is so sweet, so fragrant. Sweet baked goods, molasses, ginger, apple, grape, and white wine…
This is a beautiful coffee, right out of the gate; I actually exclaimed “wow” after my first sip. It’s on the lighter side of a medium body, possessing a silky mouthfeel with a bright, lively white wine acidity. Flavors of unrefined sugar, crisp green grape, and candy apple sweetness on top, held up by bakers chocolate, anise, hazelnut, molasses, toffee, and toasty cinnamon beneath.
If you follow me on Twitter, you might have seen a recent tweet about this coffee, in which I boldly proclaim, “I’m just gonna say it. The Colombia La Laguna…is THE BEST coffee from @HalfWitCoffee I’ve had yet.” I’ve had a LOT of coffees from Halfwit; in fact, I think Halfwit has been featured on the Table more than any other roaster. So I know my tweet is a bold proclamation, but it’s one I’m standing behind.
Halfwit Coffee Roasters’s Colombia La Laguna is the best offering I’ve had from them yet. For a coffee that was so bright and lively, it was structured very well; it had great balance, with its effervescence being contrasted by its heavy, chewy flavors of toffee and molasses. Moreover, it was just a damn tasty coffee.
